Casa Italia Restaurant, Slupsk, Poland

We conducted a consultancy at the Casa Italia restaurant in Slupsk, Poland. The consultancy focused on improving the restaurant's culinary offerings, particularly on preparations of traditional Italian baked goods such as bread, focaccia and breadsticks. In addition to baked goods, we provided the knowledge and skills necessary for the  preparation and storage of fresh pasta.

01 Focaccia Genovese

One of the main goals of the consultancy was to improve the quality of the restaurant’s focaccia since the restaurant offers it as a complimentary starter to every customer. Through working closely with the kitchen staff, we meticulously refined the product to ensure that the flavor and texture were in line with Italian tradition. In addition to this, we provided recipes and guidelines in order to standardize the product offered to the end customer.

Besides the improvement of focaccia, we focused on training the personnel in the preparation of breadsticks and various types of bread. In this case, we used a scientific approach, which through specific instructions and insights into the art of bread making, enabled us to ensure consistent results for the kitchen staff.

03 Fresh Pasta

A significant aspect of the consultancy was devoted to the production of fresh pasta. Here, in addition to training on recipe preparation, we provided precise guidance on calculating the expected quantities of pasta to be produced for the following week, helping kitchen staff to have optimal organization and avoid food waste.

04 Conservation

Of course, along with planning the expected quantities of pasta production, we made sure that the kitchen staff received detailed information on the proper storage of fresh pasta. This information is of paramount importance in maintaining the high quality of the product and avoiding waste.

The consultancy performed was of essential importance in meeting an important need of the venue, that is, taking care of every single aspect of their customers' dining experience, and thanks to us, they were able to improve the preparations handled during theconsultation. We did not stop at just training the staff on the preparations in question but also took care of providing materials that can make the kitchen staff completely independent for the future.

Casa Italia Restaurant, Slupsk, Poland

We are excited to announce our second consultancy at the Casa Italia restaurant in Slupsk, Poland. Following the excellent results of the first consultancy they decided to rely on us again for a review and improvement of their menu.

01 Analysis of processes and production techniques

During the first few days we worked alongside the kitchen staff in order to analyze and identify issues that needed to be tackled from the perspective of processes and food preparation techniques.

02 Improvement and efficiency

As a result of the research, we decided to focus our efforts on perfecting the first courses. We provided the staff with theoretical and practical knowledge on the preparation of pasta, risotto, and related sauces. In addition to all this, we provided the necessary guidelines for the storage of sauces, pasta, and precooked risotto. The activity carried out will enable the restaurant to improve operational efficiency and reduce the time needed for the preparation of first dishes.

03 Proposal of dishes of the day

Throughout the consultancy, we proposed so-called “dishes of the day” on a daily basis. This allowed the kitchen staff to explore new preparations to offer to their customers. In addition, at the end of the consulting period we provided the relevant recipes to support the restaurant in case they decided to implement the dishes in their menu.

04 Typical Italian Dinner

In order to promote our presence in the restaurant, we organized a dinner that would give the restaurant’s clientele a new and exciting experience. For this occasion, we designed a menu that would allow guests to taste new flavors and combinations of traditional Italian cuisine. 

The work we did was of fundamental importance in supporting Casa Italia restaurant in its mission to be a true ambassador of Italian gastronomic culture. During the consultation we not only helped the restaurant from the point of view of the quality of the offer but also focused on improving the efficiency of the kitchen staff so that they can have an excellent and consistent proposal for their patrons.
