We conducted a consultancy at the popular Pizza po Kawalku pizzeria in Slupsk, Poland. The main objectives of the three-day consultancy were to optimize operational and production processes, analyze the economic efficiency of the business, and introduce seasonal pizzas to improve and expand the proposal on the menu.

01 Process optimization

We worked closely with the pizzeria staff to analyze and optimize operations. One of the main areas we focused on was the implementation of pre-cooked pizza bases, which significantly reduce preparation time and ensure consistency of the finished product.

02 Economic Analysis

Before going to work on economic efficiency, we conducted a business profitability analysis to identify areas for improvement. The in-depth study focused on key aspects of food cost such as the cost and quantity of ingredients used, portions and price of the final product, and finally staff labor.

03 Tools and Resources

After the analysis was performed, we provided tools to support the pizzeria owner in managing costs and forecasting them:
   
   a. Ingredient calculator: the tool provided permit to calculate the exact quantities of ingredients needed based on the expected pizza production allowing to reduce waste and accurately manage inventory. 

b. Food cost calculator: this tool allows to automate the food cost calculation by including very important factors such as the quantities of ingredients to be used, the percentage of waste expected, energy consumption, and labor costs.
